Day 17

Surprisingly, this was the first real soup meal we’ve had. It was tasty, but a little weird. No beans, no bread, no cheese, no yogurt… just soup. But like I said, it was good. We put some almond flour and coconut milk to creamify and thicken it up. It was a tomato base with pulled chicken and the remaining kabob vegetables from the weekend.

Tomorrow I’m bringing egg cups to share for Fat Wednesday. They have green onion, mushrooms, and hot sauce.

  • Breakfast: egg cups
  • Lunch: leftover pork, cauliflower rice, fruit
  • Dinner: chicken vegetable soup

Day 4

The ice cream cake was back again today. But Fat Wednesday was pretty mild: just breakfast burritos. For the record, Fat Wednesday refers to the  Wednesday team meeting at work that turned into a weekly potluck that turned into a calorie fest. All that said however, people at work have been pretty supportive of what I’m doing with Whole30. They have asked lots of questions and can see that I still have lots of good options to consume and don’t have to worry about counting calories. And they all know that their own belts have suffered the wrath of Fat Wednesday.

  • Breakfast: egg cups
  • Lunch: Leftover spaghetti squash and salad (pecan pie Lärabar’s are pretty good!)
  • Dinner: beef & snow pea stir fry
