The whirlwind of getting back to work stole some of the thunder from this post-30 day.
The egg cups were strange today. The unscrambled eggs went in first with seasoning and additions added last, which is opposite of usual. The result: they tasted fine, if not evenly distributed in the flavor department, but there was a cavity at the bottom of the cup where an air pocket formed during cooking. I don’t know if is because they were in too long or because of the order of ingredients.
Probably on a more interesting side, today was legume day. I know, I know… A-MA-ZING! I had peanut butter on a banana, mostly because I could, as a snack before dinner. Then we had tofu with green onions and soy sauce along with dinner. I guess now I have to pay attention to how my body reacts. Hopefully step one in the reunification of the dynamic duo of peanut butter and chocolate causes minimal damage because life without that combo would be tragic. I’m banking on chocolate rejoining my diet in due time.
What is a Sloppy Joe without the bun? Just Sloppy? Well, I can tell you, Sloppy without a bit of brown sugar just doesn’t quite have the same magic. The sweet helps cut the acid of the tomato base, and carrots just don’t have enough punch to make up the difference.
- Breakfast: egg cups
- Lunch: leftover cauliflower mash with chicken curry
- Dinner: tofu and Sloppy over potatoes
